'Non-Recipe' Recipe: Apple Carrot Slaw
Apples and carrots are both in season at the Downtown Farmers’ Market and together they make a sweet side dish.
Fall is the perfect time to make Apple Carrot Slaw. It is a great side dish with grilled pork or hamburgers. It is also economical. At The Market, you can buy four tart apples, we used Zestar apples from Timeless Prairie Orchard, for $3.50. Carrots can be purchased from Mai Yangs and cost $2 for five carrots.
The dressing for the recipe is made from pantry staples — mayonnaise, sugar, apple cider vinegar and salt.
The apples and carrots are julienned (cut into thin strips) and that will take up most of the prep time for this recipe. The dressing comes together in about a minute.
Dish: Apple Carrot Slaw

Ingredients
4 tart apples (we used Zestar) from Timeless Prairie Orchard
1 bunch of carrots (about 4-5) from Mai Yangs
1 cup mayonnaise
3 Tbsp sugar
2 Tbsp apple cider vinegar
Pinch of salt
Method
Wash the carrots and apples, peel the carrots if you prefer. Julienne chop the carrots and apples into equal sized slices. Set aside. In a large bowl whisk together the remaining ingredients. Add the apples and carrots. Serve immediately.
