Say Hello to … Purslane! Don’t know what it is? No problem! We talked with Farmer Ben of Wabi Sabi Farm to find out more about this plant that is considered both a weed and a super food depending on who you talk to. While easily grown in Iowa (and considered a weed by most home gardeners and farmers), Ben had never planned on growing it. He learned about purslane from a couple working with the Lutheran Services of Iowa Refugee program. After they taught him how to prepare it, he started growing it himself. Ben’s favorite way to eat purslane is on his yogurt. His customers also use it for smoothies, salads and in stir fry. Purslane is one of just a few vegetables high in omega-3 fatty acids, iron, vitamin A, C and beta-carotene, which is why many people consider it a superfood. You can plan on purslane being in season throughout August.
